Roast chickens debate

There's a bit of debate over on the Guardian website about the proper roast chicken recipe. (ht/Marginal Revolution). As I say in the comments over in MT, the only trick that actually works is to use a tiny bird : 2-3 pounds, maybe 4 at the most. At that size, you can roast at a very high Keller-ian temperature, get fantastically crisp skin, and moist meat. I also use air through a straw to separate the skin from the breast, but that's just extraneous "faf".
