Two bean salad
Trim some green beans and salt some boiling water heavily. Boil for two minutes.
Finely slice some shallots, and throw them in the water with the beans. After four minutes or so remove and shock in an ice bath. Pat dry.
Throw some canned cannelini beans in a bowl, and add the shallots and beans.
Make a dressing with sherry vinegar, olive oil, and salt and pepper, perhaps some mustard as well. A standard dressing, with about 2.5 oil to vinegar.
