Peanut Sauce

Chop a challot. Crush garlic. Peel some ginger, and grate. Seed and chop some chilies. Fry all of these until soft in a little vegtable oil. Season with coriander, add crunchy peanut butter and a little water, and bring it to the boil.

I bet this can be used equally well with a sort of noodle dish with maybe some shrimp as well as on chicken kebab things.
