Date and Walnut Bread
2 cups whole wheat flour
2 tsp baking powder
2 tsp cinnamon
1/2 tsp ground cloves
pinch of salt
6 tbs butter
1/2 cup dark brown sugar (again, the raw cane variety that's still full
of molasses)
2 eggs, beaten
1/2 cup milk
1 cup chopped dates
1/2 cup chopped walnuts
2 tsp orange zest
Sift together the flour, baking powder and spices. Beat the butter with
the sugar, then add the eggs. Gradually add flour and milk. Mix in nuts
and orange zest. Pour into a buttered and floured cake tin and bake at
160 Celsius for 60-75 minutes (depends on your oven). You can eat it
plain or with butter (or peanut butter), and you can even toast it if
you have any left over that's getting stale.
