Clam Chowder

This is a really simple clam chowder, and delicious.

Sautee some chopped onions in a little oil. If you're being unhealthy, actually, what you really ought to do is render some bacon fat, take out the bacon, and fry the onions in that until soft. Add diced potatoes (peeled and raw- they'll boil to a perfect consistency in the time allotted), clams (this can be either tinned or fresh, the latter being preferable, of course) and enough milk to cover everything comfortable. Simmer gently for 20 minutes, salting periodically. Finish with some freshly ground black pepper, and serve with bread or crackers.
